What We’re Eating: Cheesy Turkey Apple Sliders with Apple, Avocado and Honey Mustard

So I’m trying something new… I’m calling it the “What We’re Eating” series. I know that sometimes cooking can suck and can be a chore at the end of the day so my goal is to share some quick, cheapish, relatively healthy recipes with you. So here it goes…

As the title says, this is a recipe for sliders made from turkey meat and mixed with apple pieces and covered in cheese, placed on a bun, slathered in honey mustard and finished off with a slice of apple and avocado. This should serve 4. Or two people for 2 nights if you’re in my house.

Here’s what you’ll need:

  • 1lb ground turkey (I used 93% lean)
  • 2 gala or Fuji (Fiji? not sure…) apples
  • 1 avocado
  • cheese of choice (I prefer 2 slices of Cabot extra sharp cheddar, but pre-packaged slices of American can work also)
  • Honey mustard
  • Slider buns (can be left out if you’re doing the paleo/low carb/whatever’s hip at the moment diet)

Here’s what to do:

  1. Dump the turkey meat into a bowl
  2. Slice up both apples into round slices for the buns and put aside. Take the rest and dice it up into small pieces and mix (with your hands, this part is icky) into the turkey. (Pro-tip: if you slice each apple until you reach the core and continue on the opposite side of the core parallel to the first slices, you’ll be left with about 1/3 of the useable apple which is perfect for dicing to be used in the burgers. I tried making a diagram of this and it failed…sorry!)
  3. Form patties with this mixture and grill them however you please (we use a George Foreman)
  4. Before the burgers are completely cooked, place the cheese on them to melt for a few minutes
  5. Slice up the avocado
  6. Spread honey mustard on the buns, layer a piece (or two… or three) of avocado along with a slice of apple on the buns
  7. Add the burgers
  8. Enjoy you’re dinner and relish in how quick it was.
