Sweetly Stuffed Snickerdoodles

Need I say more? These cookies are delicious. THEY HAVE ROLOS IN THEM! What more could you want out of a cookie? Perfect thing to make to share after an exam so I’m sharing the recipe with you! I actually made these for my friend Seth’s birthday but since I didn’t blog about it then I will now.

Here’s what you’ll need:

  • 1 cup melted margarine
  • 2 eggs
  • 1 cup granulated (white) sugar
  • 2/3 cup brown sugar
  • 1 tsp vanilla
  • 2 1/2 cups flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp cream of tarter
  • you’ll need a little extra sugar and some cinnamon for sprinkling on top
  • Rolos (1 bag)
  • some extra flour for rolling

Here’s what to do:

  1. In a large bowl, mix together all the wet ingredients 
  2. Mix in all the dry ingredients until everything is well mixed
  3. Put the dough in the fridge
  4. Unwrap the Rolos while watching The Bachelor, Keeping up with the Kardashians, Say Yes to the Dress, or whatever you guilty pleasure TV show is
  5. When your dough is a little firmer (but not hard) take it out of the fridge
  6. Preheat the oven to 325
  7. Line cookie sheets with parchment paper (NOT wax paper)
  8. Cover your hands in flour, pick out a tablespoon-ish worth of dough, pat it flat, put a Rolo in the middle and roll the dough in your hand until the Rolo is in the middle of the ball of dough
  9. Smoosh the ball a little when you put it on the baking sheet
  10. When all your dough is gone (about 32 cookies) mix about 3 tbsp of sugar with 1 tbsp on cinnamon and sprinkle on top of your cookies
  11. Bake for 12-14 minutes. NOTE: the cookies will NOT look done. You might be tempted to cook them more but don’t. If a toothpick can come out clean (meaning if you stick a toothpick in it won’t have any doughiness on it when you pull it out) you’re done.
  12. Let them cool for a LONG time on the pan. Like 2 hours.
