A Penchant for Peppermint

Happy New Year! I have so many recipes that I’ve made in the last few months during my blogging hiatus! I don’t have pictures from most of them, but in keeping with my resolution to blog more (and study more–oops) I’m going to chug along and beg for forgiveness for not having picture evidence that I actually made the following cookies.

I made these for a get together with some friends (we watched JP & Ashley’s Bachelorette Wedding, I’m not ashamed) and they were a big hit. Ben ate 6 in one night.

Here’s what you need:

  • 2 1/2 cups all purpose flour
  • 1/2 tsp salt
  • 3/4 tsp baking soda
  • 1 cup brown sugar
  • 1/2 cup granulated (white) sugar
  • 1 cup margarine (that’s two sticks)
  • 2 eggs
  • 3/4 tbsp vanilla extract
  • 1/2 tbsp peppermint extract (which you’ll use again in peppermint bark– recipe coming soon)
  • 1 cup white chocolate chips
  • 1 cup peppermint M&Ms (you’ll find them in the holiday/festive aisles, they’ll probably be on sale now)
  • 1/2 cup crushed candy canes

Here’s what to do: 

  1. Preheat oven to 350 and line baking sheets with parchment paper (NOT wax paper, see a previous post)
  2. Mix together the flour, salt and baking soda 
  3. In another bowl, melt the margarine and add the white and brown sugars and mix well
  4. Add the eggs, peppermint and vanilla extract to the bowl from 3
  5. Slowly add the mixture from 2, stirring well to mix everything
  6. Add the chocolate and M&Ms
  7. Crush the candy canes (I used a magic bullet and basically pulverized them, but some people prefer to crush them, up to you!) and add them to the mix
  8. Stir well, put onto baking sheets in small drops (like you would any other cookie)
  9. Bake for 10- 12 minutes

Let them make your house smell like the holidays and then devour them when they cool. Don’t blame me when you get diabetes.
